Chicken Lou's® Roasted Corn Salad

Street corn has met its match with our Roasted Corn Salad! This salad works great as a side dish, pair it with grilled scallops or shrimp to make it a complete meal. Add tortilla chips and use it as a dip! Versatile, packed full of flavor and delicious!
Ingredients

4 cups corn (fresh or frozen – rinsed and drained if frozen, steamed or grilled if fresh)

2 large tomatoes, diced

1 red onion, diced

1 package of cotija cheese

½ cup of cilantro, chopped

1 lime

1 bottle of our Chipotle Ranch Dressing
Directions
Add corn to skillet with oil of preference and turn heat to medium high on stove top. Sautee corn, stirring occasionally until it turns golden brown. Remove from heat and let cool.
In large mixing bowl, combine roasted corn, diced tomatoes, diced onion, and cilantro and mix. Add in a quarter cup of our Chipotle Ranch and mix again.
Transfer corn mixture to serving vessel. Crumble cotija cheese over the top of the salad. Drizzle with another ¼ cup of our Chipotle Ranch.
Cover and refrigerate for one hour.
Prior to serving, squeeze juice of 1 lime over the top of the salad.
