Chicken Lou's® Honey Mustard Twice Baked Potatoes

This is one of Chicken Gerry's favorite recipes! She developed it for her fellow vegetarians to enjoy the flavors of a TKO™ sandwich. Omit the bacon if you live the vegetarian lifestyle and for the rest of you, enjoy the additional pop of flavor!
Ingredients

4 Russet Baking Potatoes

1.5 cup shredded Swiss cheese

1 8 oz container sour cream

1/4 cup of our TKO™ Seasoning Salt

3/4 cup of our Signature Honey Mustard

¼ Cup Bacon Bits (Optional)

Fresh Scallions, diced (for garnish)
Directions
Pre heat oven to 375 degrees. Gently scrub potatoes, but do not peel. Pierce potatoes several times with a fork to allow the steam to escape while cooking.
Place potatoes on a cooking sheet and bake in oven until tender. Approximately 1 hour.
Remove potatoes from oven. When they are cool enough to handle, cut each potato in half, length wise. Scoop out the inside of the potato into a mixing bowl, leaving a thin shell.
Mash potatoes with potato masher or electric mixer on low speed until no lumps remain.
Into your potato mixture add, sour cream, shredded Swiss cheese, our Signature Honey Mustard and TKO™ Seasoning Salt. If you would like to add bacon bits, add this now as well. Mix well to combine.
Fill potato shells with mashed potato mixture. Place shells on cooking sheet. Place potatoes back into over at 375 degrees until the tops are lightly browned and the internal temperature reaches 165 degrees.
Top with diced scallions before serving.
Recipe Note
Don't omit the fresh scallions, they add the perfect level of freshness to these potatoes!
