Chicken Lou's® Chipotle Ranch Potato Salad

One of Chicken Gerry's favorite recipes! Leftovers work great for lunch during the week!
Ingredients

8 medium sized red potatoes, unpeeled

¾ cup Chicken Lou’s® Chipotle Ranch

¾ cup mayonnaise

3 Tbsp of Chicken Lou’s® TKO™ Seasoning Salt

1 medium sized red onion, diced

3 tomatoes, diced

1.5 cups shredded cheddar cheese

1 bunch cilantro, (chopped, for garnish, optional feel free to substitute fresh parsley)
Directions
Place potatoes in large pan; add enough water just to cover potatoes. Cover and heat to boiling; reduce heat to low. Cook covered 30 to 35 minutes or until potatoes are tender.
Drain potatoes. Let stand for about 15 minutes or until cool enough to handle. Cut into cubes.
In large bowl, add potatoes and TKO™ Seasoning Salt. Mix until potatoes have a generous coating on them.
Add in Chipotle Ranch, mayonnaise, diced red onion and shredded cheddar cheese. Mix until combined.
Add in diced tomatoes and fold in gently. Cover and refrigerate for 2 hours before serving.
Garnish with chopped cilantro (optional or fresh parsley) right before serving.
Recipe Note
Don't like cilantro? Feel free to substitute with fresh parsley!
