The Southwestern 'TKO'™

(Makes 6 – 11” subs)

 

What you will need:

6 - 11” sub rolls

3 lbs. of Our ‘Signature’ Baked Chicken (recipe may be found under Lou's Approved 'TKO'™ Seasoning Salt Recipes)

18 slices cooked bacon

1/2 lb. thinly sliced Pepper Jack cheese (Approximately 12 slices)

18 fluid ounces of Chicken Lou’s Signature “Chipotle Ranch” (24 ounces for ‘Super Heavy Weight’ version)

At least 1 other friend, depending on how hungry you are!

 

Directions:

Preheat the oven to 350 degrees Fahrenheit.

Slice each sub roll down its length making sure not to cut completely through the roll.

Open each roll and put approximately 1.5 tbsp of the chipotle ranch in each, being careful to spread it evenly along the length of the roll. Close the rolls to make sure that the bread is evenly coated.

Open each roll and lay 2 slices of the Pepper Jack cheese along its length.

Add 3 slices of bacon to each sub roll, make sure that there is bacon along the entire length of the roll! Add roughly 1/6th of the cooked chicken to each roll.

Spread approximately 3 tbsp of the chipotle ranch along the length of the chicken in each sub (along the top and between the chicken and the roll). After each sub is populated, set it on a baking sheet.

Place the baking sheet into the oven and let it cook until the roll starts to brown, and the cheese starts to melt (If you are starting with cooked chicken that is still hot, the time should be approximately 5 minutes or to your desired toastiness). If you have previously cooked and cooled the chicken, we suggest preheating the chicken prior to assembling your sandwiches. 

Remove the tray from the oven and top each sub with approximately 1.5 tablespoons of the chipotle ranch.

(For the “Super Heavy Weight” version, top each sub with an additional 3.5 tbsp)

Now, all you have left to do is make your friends “friends for life” by treating them to the original Southwestern 'TKO'™!
