(Makes 3 - 11” subs)
What you will need:
3 - 11” sub rolls
2 lbs. Shaved steak
9 slices cooked bacon
9 slices American Cheese
3/4 Cup of thinly sliced onions
3/4 Cup of thinly sliced green peppers
9 tbs. Our ‘Signature' Honey Mustard
3 to 4 tbs. Franks 'Red Hot' sauce
Slice each sub roll down its length, making sure not to cut completely through the roll. Add 2 slices of American cheese to each. Set aside.
Cook the bacon in an iron skillet (or frying pay but the heavier the better). When cooked to your liking, remove the bacon and divide evenly into each roll.
Discard most of the bacon fat from the pan, leaving behind just enough to coat the pan. and place the pan back onto a medium burner until the residual bacon fat becomes hot again.
Add the peppers and onions and keep stirring them until they start to soften and the onions caramelize. Add the steak.
Chop the steak frequently as it cooks. Veggies a bit too.
When the steak has been cooked completely, top it with the remaining 3 slices of American cheese. Allow the cheese to melt.
Remove the steak from the heat and divide it evenly amongst the three sub rolls.
Top each with 3 tablespoons of honey mustard and approximately 1 tablespoon of Frank's Red Hot.
Note from 'Chicken Dave': This item was originally requested by a student from Wentworth Institute of Technology who ate at Lou's frequently. It became so popular that we added it to the menu. It happens to be one of my favorite subs from the shop. Try it, you'll love it!
